Mashed Sweet Potatoes with Pecans

Ingredients
2 pounds
Sweet potatoes (peeled and cut into 1/2 inch pieces)
1 cup
Half & Half
3 tablespoons
Butter (divided)
3 tablespoons
Brown sugar
1 teaspoon
Salt
1/2 teaspoon
Cinnamon
1/2 cup
Chopped pecans
Step by Step Instructions
- Put the sweet potato pieces and 2 tablespoons of butter into a saucepan, then cook over medium heat for 3 to 5 minutes to allow the potatoes to soften.
- Add the half and half to the saucepan, then bring the mixture to a boil. Reduce the heat back to medium, cover, and let simmer for 20 to 25 minutes, stirring frequently.
- Remove the pot from the heat, season the potatoes with brown sugar, salt, cinnamon, then mash them with a masher or hand blender.
- Stir in the pecans and the remaining butter, then serve warm.
