Spicy Sweet Potato-Peanut Soup

Vegan!
Ingredients
2 tablespoons
Olive oil
1/2 of an
Onion (diced)
1
Jalapeno (minced)
2 cloves
Garlic (minced)
3 large
Sweet potato (peeled & cubed)
1 14 ounce can
Fire roasted tomatoes
(or try using fresh)
1 14 ounce can
Coconut milk
2 cups
Water
1 teaspoon
Salt
1 teaspoon
Curry
1 teaspoon
Turmeric
1/2 cup
Chopped peanuts
1/4 cup
Peanut butter
1 or 2 cups
Kale (stems removed, chopped)
Additional peanuts for topping, if desired
Cilantro for topping, if desired
Step by Step Instructions
- Heat the oil in a soup pot over medium heat, then saute the onion, garlic, and jalapenos until soft and fragrant.
- Add the sweet potatoes to the pot and brown them, then add the tomatoes, coconut milk, water, spices, and chopped peanuts and allow to simmer until the potatoes soften.
- Stir in the peanut butter and kale, then serve once thickened. Top with additional chopped peanuts and/or cilantro if desired.
