Mashed Potatoes with Leeks

Ingredients
2 1/2 pounds
Yukon gold potatoes
Kosher salt
1 cup
Salted butter (cut into pieces, at room temperature)

Leeks (white and light green parts, thinly sliced and rinsed)
1 teaspoon
Chopped fresh thyme
1 teaspoon
Chopped fresh rosemary
1/2 to 3/4 cup
Milk
Salt & pepper to taste
Step by Step Instructions
- Put the potatoes into a saucepan and cover with cold water. Season the water with salt and bring to a boil. Reduce the heat to a simmer and cook for 15 minutes.
- Melt 4 tablespoons of butter in a skillet and add the leeks, thyme and rosemary. Cook stirring for 12 to 15 minutes. Season to taste, then set aside.
- Drain the potatoes and return the pot to low heat. Let cook for 2 minutes to evaporate the water. Add 1½ sticks butter to the pot (reserve 1 tablespoon), and mash the potatoes. Gradually mash in the milk and salt (start with 1/2 cup milk and add more if needed).
- Season with salt & pepper to taste and stir in the leek mixture. Serve topped with the remaining butter.
