Watermelon Gazpacho

Ingredients
8 cups
Seedless watermelon (cubed)
1 medium sized
Cucumber (peeled, seeded, and cut into pieces)
1 medium sized
Tomato (quartered)
1/2 of a
Red onion (peeled & quartered)
1/4 cup
Basil leaves
2 tablespoons
Red wine vinegar
1/4 teaspoon
Salt
a few dashes
Hot sauce (optional)
Olive oil (for garnish, if desired)
Fresh basil (for garnish, if desired)
Step by Step Instructions
- Blend the watermelon in a blender, pour it out into a large bowl, and set it aside.
- Put the cucumber, tomato, onion, and basil into the blender and blend until smooth. Pour the mixture into the bowl of watermelon and stir them together to form a smooth mixture.
- Stir in the vinegar, salt, and hot sauce if desired. Put the bowl into the fridge and let chill for 2 to 3 hours. Serve garnished with oil and fresh basil if desired.
