Beef Liver Dumplings

Ingredients
1/2 pound Beef Liver (raw)
1 Large onion (or multiple small onions) cut into eighths
1 teaspoon Salt
1 1/2 teaspoons Ground sage (store bought or homemade)
1/2 teaspoon Ground coriander
1/2 teaspoon Dried basil (store bought or homemade)
1/2 teaspoon Pepper (divided)
3 cups Flour
1/4 teaspoon Baking powder
3 Egg whites
1 Egg yolk
5 14-1/2 ounce cans Beef broth
1/2 cup Corn starch

Step by Step Instructions
  1. Place the liver, onion, salt, a teaspoon of sage, the coriander, basil, and 1/4 teaspoon of pepper into a food processor and blend them together until the mixture is smooth.
  2. Add the flour, baking powder, egg whites and egg yolk into the liver mixture and blend until the mixture is smooth and thick.
  3. In a Dutch oven, combine the broth, cornstarch, and the remaining sage and pepper and bring to a rolling boil whilst stirring constantly.
  4. Reduce to a gentle boil and drop the liver batter into it in heaping spoonfuls. Boil the dumplings uncovered for about 20 minutes, stirring occasionally. Serve the dumplings in beef broth.
