Bacon-Cornmeal Waffles

Serves: 6 Waffles


Ingredients
2 Eggs
1 3/4 cups Milk
7/8 cup All-purpose flour
2 1/2 teaspoon Baking powder
1 tablespoon Sugar
1/2 teaspoon Salt
1 cup Yellow cornmeal
1/4 cup Bacon fat
6-12 slices of Bacon
Honey for topping if desired
Cheese for topping if desired
Eggs make a good side dish
As does fruit such as strawberries
Or blueberries
And a good cup of coffee pairs well with nearly everything!

Step by Step Instructions
  1. Beat the eggs and add the milk. In a separate bowl sift the flour, baking powder, sugar, and salt together. Add the cornmeal to the dry ingredients and stir in the milk and egg mixture. Add the bacon fat.
  2. But the slices of bacon into halves or quarters. After pouring the batter into the waffle iron, place the bacon on each waffle iron section.
  3. Top with melted cheese, honey, or your favorite topping. Serve with eggs, coffee, and/or fresh fruit.
